The biking trails in North Tahoe are world class. There is a large variety including easy gravel roads, flowy single track, and local engineered trails for a gravity experience. The Tahoe Rim Trail forms the east-west portions of most of the loops. Forest Service road 73 (aka the Fiberboard Freeway or Mt Watson Blvd), Forest Road 63 (old Carnelian Bay Road), and Forest Service Road 73 (Sawmill Flat Road) are gravel roads that provide access and connection points to the trail network.
All rides start at the trailhead located at the corner of Pretoria and Sunset roads in Carnelian Bay.
These are a selection of longer rides in North Tahoe. These maximize singletrack, but there are some fire roads and short sections of payment needed to connect loops together.
Great loop on the east side of highway 267. Hits include the Tahoe Rim trail and Kings Beach downhill. Most climbing on fire roads. Avoids the super crowded part of the TRT to the east of the Hiway 267 junction.

This is a great figure 8 loop that hits several of the best descents in the area - TRT westbound, Watson Creek, and Hello Kitty. Half of the climbing is on fire roads. The trail that starts at mile 7 is a local trail that is probably not listed on maps. It merges into the Watson Creek Trail. As an alternative you can just take the Watson Creek Trail from the top. Fasten your seatbelt!

These are shorter rides that are less technical.
Great loop that hits the Tahoe Rim Trail, Dirks and Hello Kitty. Hello Kitty and Dirks were built by locals and create a 3+ mile downhill of of manicured berms and features. Bailouts are typically available for more technical sections.
